Anushka Pathak's love affair with food began at a tender age. By seven, she was already making perfectly round rotis and she grew older, her passion for cooking only intensified, often finding herself more comfortable in the kitchen than with her textbooks. Her mother would encourage her to focus on her studies, but Pathak's heart was set on experimenting with flavors and techniques.Balancing Passion and AcademicsPathak's academic journey was marked by a unique blend of passion and dedication. By Class 10, she had found a way to balance both – bringing her textbooks into the kitchen and studying while cooking. This unconventional approach paid off, as she ranked first in her Class 12 exams and was recognized for her academic excellence. Her decision to pursue a high school diploma with a specialization in food production and culinary arts proved to be the right one.Pathak's determination to hone her culinary skills led her to Seattle Culinary Academy, where she pursued an Associate Degree in Culinary Arts. The move to the US was a culture shock, but she faced the challenges head-on. From adapting to new measurement units to improving her knife skills, Pathak practiced non-stop, determined to prove herself. Her hard work paid off, as she consistently made it to the Dean's List and was inducted into the prestigious Phi Theta Kappa honor society.Introducing Marathi Cuisine to the WorldPathak's ultimate goal is to introduce Marathi cuisine with a modern twist to the US restaurant scene. She believes that while Indian food is popular in the US, regional cuisines like Marathi food are still underrepresented. Her project, "Chef of the Day," showcased her creativity, featuring dishes like batata vada with pomegranate pico and chutneys, tandoori chicken roulade with makhani sauce, and chai-spiced ice cream falooda. Two of her recipes are now featured on the menus of Seattle Culinary Academy's restaurants, a bright example to her culinary expertise. Pathak's journey has culminated in a job offer at Zaika Modern Indian restaurant in Seattle, where she will work on introducing authentic and modernized Marathi cuisine to the city's food scene. Her goal is to showcase Maharashtra's rich culinary heritage through collaborations, special events, or as a professional chef.With Pathak at the forefront , the future of Marathi cuisine looks bright.
