As the name suggests ‘In Green’ is a family restaurant that offers variety of vegetarian food especially Jain delicacy. Located in two places, one at Kumar Pacific Mall and other at Seasons Mall this is a perfect place for those who have restrictions over food with NONG(No onion No Garlic). With a combination of sitting arrangement this place also suits those who like to have family get- together or those who like to enjoy their meals in a group. My Indian Dream spoke to the restaurant owner Rohit Shah who believes that they offer one of the best vegetarian foods in the city. Tell us about your restaurant and its ambience. We have designed our restaurant in a way that suits people in group. There are many small parties and get together that we offer and those who love vegetarian food we offer them an array of variety. For those who come in more numbers, we give them a secluded area to enjoy in their group. There is also an AC restaurant and a roof-top restaurant with a beautiful ambience for those who want to enjoy their meal at ease. There is also a television display for those who do not want to miss on their favorite sports while they are out for dinner. For get together parties there is a small live stage where performances take place therefore one can enjoy food, music and family. What about the variety of food offered? We offer variety of cuisines like Indian, oriental and continental. What is special about our menu is that we offer Jain Food. We believe that it is one of the difficult cuisines under Indian category as there is restriction for using onion and garlic. But our restaurant has almost 60 per cent of menu as Jain. There is variety of tandoori dishes for starts that we offer and our restaurant also gets appreciation for special rotis that we make. We also offer Thai Curry in Jain menu which is another dish for which our guests love to visit our restaurant. As you are in the Hoteling business, what do you do to avoid food wastage? Food wastage is of a much concern taking into consideration the value for food. We have a tie-up with orphanages. If we feel that more food is going to be wasted in the party, then we call them and they happily come ahead and take the food along with them. Also, we have a special section for the untouched food. If the guest orders some food and is partially not taken in their plates and is kept in the serving bowl then we keep the food at the storage place and allow our steward and waiters to eat.
